Some common vegan ingredients:
- Nutritional yeast: gives a nutty cheese-like flavour. Particularly good for sauces or sprinkling on top of dishes as you would parmesan
- Aquafaba: the water in which chickpeas have been cooked (usually brine from the tin). Useful for replacing egg in cakes and meringues. In cakes roughly 3 tbsp of aquafaba = 1 whole egg.
- Flax seed: another useful ingredient in baking. Once ground up, use 1 tbsp of flax seed mixed with 2.5 of water to replace 1 egg. Let it sit and thicken in a bowl before adding it to the cake mixture.
